I have noticed that frequent quizzes work great to keep students on their toes, also when students have trouble with a particular quiz they usually take it personally and strive to improve imediately. It usually spurs alot of good questions so that student fully understands the material for the future.
I like to give a ten question quiz with answers there but all scrambled up so they have to hunt the answers, this seems to work good.
I like to give weekly quizzes. I find it very helpful. It helps me evaluate how much they learned and also it helps them evaluate themselves on how much they have learned, therefore increasing their confidence.
I give a quiz everyday and they are the first five minutes of the class. They are 4 questions and they are also counted as extra points towards there final grade. This also get them there on time for class and makes them open the book.
I agree you can clear things up if they have a misunderstanding of the material,or clearify an subject.
Brian, I started giving constant quizzes to my classes this quarter. I agree that it keeps them on their tools, is a way for me to see if they are reading and understanding the material and provides discussion and feedback to all of us. Great post.
I agree Rory- it is important to go over quizzes to make sure students understand why any answers were incorrect.
I use quizzes to see if they understand what was covered in class the previous day and then go over material.
I use quizzes to provide evaluation of the knowledge gained by the students on a weekly basis. I then structure my summaries and teaching style to help students learn.
Absolutely, I will question students individualy at random times. A lot of times it will allw mw to catch issues before they affect the student adversley.

At the end of each lecture I use a jeopardy style game to play in the class which has really help me to find how effective my lectures are and what areas I need to change. It also allows the students a chance to see what portions of the lecture they are weak on.
I like to quiz the students on information we have gone over mostly when it is real hard facts or basic techniques that have to be done a certain way. That way the remember the answeres and it becomes part of their overall knowledge base. For example 1 cup is 8 ounces, that is a fundimental measurement in culinary. To make sure my students know their measurements I quiz them once a week on measurments.
I have had the same experience and give a short 5 minute "T / F quiz" that is only worth a point or two, every week to help the student(s) and myself determine if they are generally comprehending the material, or are getting left behind.
