I have been using students to do Demo's for a few years now and it has been very successful, during the lecture I cover all SOP's, safety concerns and steps.

I always ask for a volunteer, and usually have a student happy to lead the demo, I find it gives me the opportunity to cover the key points while guiding the demo. and gives the students confidence seeing a peer doing it for the first time.

you can never underestimate the impact outside factors can have on retention, just listening to students challenges with work life balance can help you to find solutions and find additional support for students in danger of quitting 

if a student feels ignored they are less likley to push thru hard times, giving just a little attention to each student keeps them engauged and more likley to press on.
I find that sharing my to do list with my maniger gives me a sence of confidence when it is completed and lets him know that I am using my time wisely.
I fing that including student interests to tweek the lesson can really help to keep interest in the lesson plan.
Sharing my personal goals and how I attained them really motivates my students, sharing the pitfalls I encountered and how I overcame them helps the students to understand that resolve is one of the most important tools they will use in life.
