Sounds like that even with the highly structured curriculum you are able to zero in and provide instructional support to your students in a way that is meaningful to them. This keeps them in the course while meeting their learning needs.

On the first day ask questions about their real life experiences. Perform a pre-test on basic information on the course. Pull from the pre-requisite courses. Ask student what their expectations are for the instructor and the course. Let them know your expectations.
